This is a perfect holiday meal. These ribs are also perfect for any special occasion or any day you would like to treat yourself to something fancy.

What inspired me to create this recipe was my love for short ribs, but truth be told I am not a big fan of pot roast style short ribs. I have tried many braised short ribs, but the combination of carrots, tomatoes, and tomato paste that typical braised short ribs recipes have, are not to my liking. I wanted to make this recipe different and the pomegranate molasses makes it so good and unique in the best possible way.

Can we talk about the star of the show…the short ribs! If you haven’t tried short ribs, you must do so as soon as you can. You are missing out! Short ribs are tender and incredibly delicious. The meat melts off the bone. I made these short ribs the other night and everyone was raving about them. The secret ingredient is the pomegranate molasses, let’s talk about pomegranate molasses for a minute.

What is pomegranate molasses?

Pomegranate molasses is reduced pomegranate juice with sugar. You can make it at home or buy it at the store. I bought it at the store because it was a shortcut and did not compromise the flavor. I am all about shortcuts that do not compromise flavors.

How to make Braised Short Ribs with Pomegranate Molasses

Now, let’s make these delectable braised short ribs with pomegranate molasses.

Start by heating the oven to 325 degrees.

Next, place short ribs on a baking sheet and pat dry. Then add flour to a plate and set aside.

In a Dutch oven heat the avocado oil over medium-high heat. Season short ribs with garlic powder and salt on all sides.

Then, drench the short ribs in the flour. Sear short ribs on all sides, working in batches, until browned, about 6-8 minutes per batch. Once browned, transfer the short ribs to a large plate and continue with the remaining batch.

Next, add the onion, rosemary, thyme to the Dutch oven and cook for about 3 minutes. Then make room and add the head of garlic, cut side down, and brown.

Add the wine and deglaze the Dutch oven (with a wooden spoon scrape up any browned or caramelized bits).  simmer for about 5 minutes, then add the beef broth and pomegranate molasses.

Return the ribs to the pot along with any juices that accumulated. Make sure to nestle the ribs until submerged.

Bring to simmer, then cover the Dutch oven, and transfer to the oven.

Cook the short ribs for about 2 ½ hours, until the short ribs are tender, almost falling off the bone.

Carefully remove the short ribs from the Dutch oven, and transfer to a large plate.

Separate the fat from the sauce, season with salt and pepper and serve. You can serve this dish over mash potatoes; I made some mash potatoes with brown butter, mascarpone cheese, and milk. The whole meal was perfection!

For presentation purposes add pomegranate arils and herbs.

  • 3.5 lbs short ribs about 8 short ribs
  • ½ cup pomegranate molasses
  • 2 cups red wine
  • 2 cups beef broth
  • 1 whole garlic large – halved crosswise
  • 1 onion chopped
  • 3 sprigs rosemary fresh
  • 4 sprigs thyme fresh
  • ½ cup flour
  • 1 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 tablespoons avocado oil
  • Pomegranate arils and herbs optional – for presentation purposes
