It’s a refreshing summer meal alternative to hamburgers. I have to share with you how this recipe came to life. It all started about 17 years ago. Yes, that long! Which by the way I am enjoying my maturity level. But back to the amazing chicken sandwich. I used to visit a chain restaurant in LA where I would always order a yummy salad. That day it was a hot summer day and I was really craving something other than a salad, but still needed something refreshing. The sandwich was a chicken brie sandwich and it was a seasonal offering. I was a bit hesitant to order it, but I am sure glad I did. It was so yummy. Well I went back two weeks later and it was off the menu. I was so disappointed! Not sure why I did not think to go home and make it back then.

Fast forward 16 years, I was walking through the aisles of my local farmers market and lo and behold I see watercress. That’s all it took, one long look at the watercress to bring that nostalgic moment. A wistful yearning for the happiness felt on that summer day. I was so determine to make that perfect chicken brie sandwich. I went home and made that delicious chicken brie sandwich. And let me tell you it was better than what I remember. I am not being biased either, a few others tried it and agreed it was super yummy. Including my test kitchen.

Chicken Brie Sandwich

Ingredients
  

  • 4 boneless chicken breast
  • 1 bunch watercress
  • 8 ounces brie cheese sliced
  • 2 tablespoon brown sugar
  • 2 tomatoes sliced
  • ¼ red onion thinly sliced
  • 4 buns Kaiser, Brioche
  • Salt and pepper
  • Butter or oil
  • Mayo

Instructions
 

  • Cut the chicken breast in halves or thirds if they are big. Sprinkle salt and pepper on both sides. 
  • Heat the skillet over medium high heat and add butter or oil. 
  • When the skillet is hot, seared the chicken breast for about 3-4 minutes per side, depending on how thin you cut them. Once you have turned them, on the last 2 minutes of cooking time sprinkle some brown sugar on each piece and continue cooking. The brown sugar will began to melt on the chicken. 
  • Once they are cooked remove them from the pan. Add the brie cheese immediately. 
  • Cut in half and toast the buns with a little butter on a skillet. 
  • You can now start assembling your sandwich. I like to start with the mayo, add the chicken, tomato, red onion, and watercress.
