I have been trying to eat healthier, not a diet, but change in eating habits. I am challenging myself to creating healthier dishes, without compromising taste. This recipe accomplishes just that. It’s low calorie, but its packed with delicious flavors.

Chicken salad is so versatile, you can eat it in a sandwich, in lettuce wraps, on crackers, in a wrap, on top of a salad. There are so many ways to eat chicken salad.

Best chicken to use for chicken salad

The best chicken to use for chicken salad is rotisserie chicken or poached chicken. I like to use rotisserie chicken because I can buy a juicy rotisserie chicken at the store and use it for multiple meals.

Low calorie creamy mixture

For the creamy mixture I used labneh and light mayo. The labneh is very creamy. The light mayo brings the mayo flavor, but it has less calories than regular mayo. The combination of the labneh and light mayo is a perfect combination to bring the creaminess that the chicken salad needs.

How to make chicken salad

To make this chicken salad you need cooked chicken breast, chopped celery, chopped red onions, sliced almonds, grapes, fresh dill, labneh, and light mayo. In a bowl, place all the ingredients, and toss until well combined. Add salt and pepper to taste. Then, its ready to be served.

I buy the rotisserie chicken and use the chicken breast. You can also use poached chicken, or any chicken breast leftovers. It’s a great way to use leftover chicken.

The celery brightens the dish and provides crunchiness. The red onions are perfect with the other ingredients. The almonds bring the perfect crunch. The grapes add the perfect amount of sweetness and crunch. The dill is the prefect herb that adds brightness to this recipe. The labneh and the light mayo bring the perfect amount of creaminess to the dish.

Ingredients
  

  • 2 cups cooked chicken breast
  • ½ cup celery chopped
  • 2 tablespoons red onion chopped
  • ¼ cup almonds sliced
  • 1 cup grapes (cut in half)
  • 1 tablespoon dill fresh – chopped
  • 2 tablespoons labneh
  • ¼ cup light mayo
  • Salt and pepper to taste

Instructions
 

  • In a bowl, place all the ingredients and toss until well combined.
  • Add salt and pepper to taste
  • Voila! You have a delicious chicken salad
