The chicken is fried until golden brown and is crispy and juicy. The slaw brings refreshing and spicy flavors. The bread and butter pickles offer a nice crunch with tangy and sweet flavors. How to make fried chicken burgers
To make the fried chicken burgers start by preparing the slaw and spicy mayo.
Slaw
Place red cabbage, jalapenos, cilantro, bread and butter pickles, pickle juice, in a bowl and mix until well combined, cover and chill.
Spicy Mayo
In a small bowl, mix the mayo and sriracha until well combined, cover and chill.
Next, its time to make the chicken.
Fried Chicken
In a shallow bowl, whisk flour, cornstarch, paprika, garlic powder, light brown sugar, salt, pepper.
Place the buttermilk in a bowl.
In a large cast iron skillet pour ½ inch of oil. Place deep-fry thermometer in oil, over medium heat, heat the oil until the thermometer reaches 350 degrees.
Working with 1 piece of chicken at a time:
- dredge the chicken into the flour mixture, shake off excess
- dip into buttermilk
- dredge into flour mixture again, shake off excess
Fry the chicken until its golden brown and cooked, about 2-3 minutes per side. The safe cooked temperature for chicken is 165 °F (with an instant-read thermometer). Transfer to a baking sheet with a wire rack and season with salt.
Next, prepare the brioche buns and assemble the delicious fried chicken burger.
Prepare Buns
Butter the cut sides of the brioche buns. Over medium heat, heat a large skillet, place the buns cut side down, brown and toast.
Assemble
Spread the spicy mayo on the brioche buns, add bread and butter pickles, add the fried chicken, drizzle generously with honey, then add the slaw and voila!
Bread and butter pickles tip
Remember to use pickles that have been refrigerated. Store bought pickles that have not been refrigerated are not crunchy.

- 3 8 oz chicken breast halved crosswise
- ½ cup buttermilk
- 1 cup flour
- ½ corn starch
- 1.5 teaspoon paprika
- 1 teaspoon garlic powder
- 1.5 tablespoon light brown sugar
- 2 teaspoons salt
- Pepper to taste
- Canola oil for frying
Slaw
- 3 cups red cabbage thinly sliced

- ½ mayo
- 1 tablespoon sriracha

- 6 Brioche burger buns
- 2 tablespoons butter

- 3 tablespoons Honey to drizzle
- 18 bread and butter pickles
