The salad provides very distinct gourmet flavors, it makes you think you are eating a delicious salad at a high end restaurant. If you haven’t tried fennel this is a great way for you guys to meet.

So it’s been a while since I last posted. I took some time off because I was pregnant and was unable to look at food. That was definitely problematic considering I have to cook, test, and write about food. But I am back now better than ever! (smile) It’s been pretty busy around here with a newborn and a toddler, but I wanted to continue to share my love for food in this little internet corner of mine. Now, that I have explained my absence we can continue to what’s important in this site, and that’s Food! I have so much to share and I can’t wait to share it. Now, back to this yummy salad.

Fennel has a licorice flavor, I am not a fan of black licorice, so I was a bit hesitant to try it. Licorice reminds me of cough medicine. I know some people may love the taste, but I just don’t really like it. The first time I tried fennel was in an Italian dish. It was a pasta dish with shrimp, wine, and fennel. I was so pleasantly surprised at the flavor. Fennel has a licorice flavor, but it’s super subtle and the texture is crunchy and slightly sweet.

This is how you make Pear Fennel Arugula Salad

This salad is easy to make. You start by thinly slicing the fennel with a mandolin, you can also use a knife, but a mandolin is much easier. Next, julienne the pear, I like to use a Julienne Peeler you can purchase at amazon for about $10 (here is the link). I love the julienne peeler, it’s so handy for making salads or making fun shapes with vegetables for kids. My little one loves when I julienne veggies for her. Sliced-Fennel-Sliced-Pear | www.butterandthings.comNow, it’s time to make the dressing, mix the orange muscat champagne vinegar (Trader Joe’s product), avocado oil, honey, salt and pepper. Once you have made the dressing pour the amount desired into the salad. You can use this dressing for other salads too.

Ingredients
  

  • 1 Fennel Bulb thinly sliced
  • 1 Pear julienne
  • ¼ Cup Orange Muscat Champagne Vinegar
  • 1/3 Cup Avocado Oil
  • 2 oz. Feta Cheese crumbled
  • 2 Cups Arugula
  • ½ Cup Candied Walnuts
  • 1 Teaspoon Honey
  • Salt and Pepper to Taste

Instructions

  • For the dressing, mix the orange muscat champagne vinegar (Trader Joe’s product), avocado oil, honey, salt and pepper.
