This Spinach Tortellini Soup is so comforting and delicious. It has delicious pillowy spinach & cheese tortellini, tender spinach, sausage, in a delicious creamy soup.
Remove the casing from the sausages and brown in a Dutch oven, once the sausages are brown remove and set aside. Remove the grease from the pan.
Next add the bacon and cook until crispy, remove and set aside. Remove the grease, but leave a tablespoon of grease in the pot
Next add the garlic and cook for a minute.
Once the garlic is cooked, add the sausage, broth, Parmesan rind, and bring to a boil. Lower the heat to a soft boil for 10 minutes, then add the tortellini, cook per package directions.
Once the tortellini are al dente, add the spinach and nutmeg, cook for another 5 minutes.
Then add the cream and stir until combined. Serve the soup with grated Parmesan cheese on top.

I use a regular spinach bunch, but you can also use baby spinach. I use Grana Padano Parmesan from Trader Joe’s.Parmesan rind and Parmesan cheese for garnish are not included in the nutrition value as these are optional.
