Pear Fennel Arugula Salad

Pear Fennel Arugula Salad is a very bright and refreshing salad packed with lots of distinct flavors. It’s perfect for a light meal, side dish, or a starter. The salad provides very distinct gourmet flavors, it makes you think you are eating a delicious salad at a high end restaurant.

Ingredients
  

  • 1 Fennel Bulb thinly sliced
  • 1 Pear julienne
  • ¼ Cup Orange Muscat Champagne Vinegar
  • 1/3 Cup Avocado Oil
  • 2 oz. Feta Cheese crumbled
  • 2 Cups Arugula
  • ½ Cup Candied Walnuts
  • 1 Teaspoon Honey
  • Salt and Pepper to Taste

Instructions
 

  • Thinly slice the fennel with a mandolin, you can also use a knife, but a mandolin is much easier.
  • Next, julienne the pear, I like to use a Julienne Peeler you can purchase at amazon for about $10.
  • For the dressing, mix the orange muscat champagne vinegar (Trader Joe’s product), avocado oil, honey, salt and pepper.
  • Pour the amount of dressing desired into the salad and finish the salad by adding the feta cheese and candied walnuts. I used store bought candied walnuts to save time. Now, enjoy!
