Chicken Wild Rice Soup is a delicious hearty soup filled with tons of veggies. The soup is creamy, comforting, and flavorful. Thanks to the secret ingredient this soup is not your normal chicken wild rice soup. It’s a must try!
2teaspoonschicken bouillonBetter than Bouillon brand
6cupschicken brothhomemade
1cupricerice blend
1cupheavy cream
Instructions
Add 2 tablespoons of butter to a soup pot over medium heat. Add carrots, celery, garlic, onion, mushrooms, celery seeds, and thyme. Then add salt and pepper.
Cook stirring occasionally for about 8 minutes, until the vegetables begin to soften.
Add the rice to the pot and cook for 3 minutes. Then gradually stir in the chicken broth.
Bring to a boil, then simmer over low heat, stirring occasionally, for about 30 minutes until the vegetables are tender.
Add the chicken and simmer for about 10-15 minutes until the rice is tender.
Add heavy cream and season with more salt to taste if need be, stir until well incorporated. Voila! Soup is ready to be served.
Notes
For the chicken bouillon I used "Better Than Bouillon" brand.
For the salt adjust depending on the bouillon brand you use. Some bouillon brands are very salty.
