Pear Fennel Arugula Salad

Pear Fennel Arugula Salad is a very bright and refreshing salad packed with lots of distinct flavors. It’s perfect for a light meal, side dish, or a starter. The salad provides very distinct gourmet flavors, it makes you think you are eating a delicious salad at a high end restaurant.

  • 1 Fennel Bulb thinly sliced
  • 1 Pear julienne
  • ¼ Cup Orange Muscat Champagne Vinegar
  • 1/3 Cup Avocado Oil
  • 2 oz. Feta Cheese crumbled
  • 2 Cups Arugula
  • ½ Cup Candied Walnuts
  • 1 Teaspoon Honey
  • Salt and Pepper to Taste


  1. Thinly slice the fennel with a mandolin, you can also use a knife, but a mandolin is much easier.
  2. Next, julienne the pear, I like to use a Julienne Peeler you can purchase at amazon for about $10.
  3. For the dressing, mix the orange muscat champagne vinegar (Trader Joe’s product), avocado oil, honey, salt and pepper.
  4. Pour the amount of dressing desired into the salad and finish the salad by adding the feta cheese and candied walnuts. I used store bought candied walnuts to save time. Now, enjoy!
