You probably have corned beef leftovers and you can easily put together this amazing sandwich. But if you don’t have corned beef leftovers, do not worry, I have the recipe for you. The best part is that, St. Patrick’s days just passed, so all corned beef is on sale…right about now!

Anytime I eat at a deli, I always order a corned beef sandwich. There is so much flavor in corned beef and truth be told homemade corned beef is so much better than what you can get at the grocery deli counter. But don’t get me wrong if you don’t feel like taking out your crockpot, you can buy corned beef at the deli counter. It doesn’t taste the same as the freshly made corned beef. The 10-hour wait is well worth the wait.

Best method of cooking for corned beef

I love corned beef and I have tried every single method of cooking it. I must report that the slow cooker is by far the superior method. It yields the most tender, perfect texture corned beef. Other cooking methods like slow baking it in the oven, or slow cooking it in the Dutch oven work too, but nothing compares to cooking it in the slow cooker for about 10 hours. Ten hours? Yes, I know it sounds like a very long time, but it is so worth it. The final product is a tender juicy corned beef that is to die for.

Corned beef is so versatile, you can eat it with potatoes, carrots, and cabbage, St. Patrick’s Day style. You can make a delicious sandwich like this recipe. Or you can eat it for breakfast and make corned beef hash. By the way one of my favorites.

How to make the best corned beef

What you will need to make the best corned beef is corned beef brisket (with spice packet), garlic cloves, bay leaf, maple syrup, apple cider vinegar, stone ground mustard, and water. Place the corned beef in the slow cooker with spice packet, then add the rest of the ingredients. Make sure to add enough water to submerge the corned beef brisket. Set the slow cooker to 10 hours and that is all the prep you need to do for the corned beef brisket. Very easy to make and its so good.

How to make a corned beef sandwich

To make these delicious sandwiches you will need corned beef, creamy coleslaw, Russian dressing, swiss cheese, and toasted rye bread. Start by lightly toasting the rye bread, then spread Russian dressing on the bread. Next, place a slice of swiss cheese on top of the bread, then pile a good amount of corned beef on top of the cheese, top it with the creamy coleslaw, and place the other piece of bread on top. And voila! You have the best corned beef sandwich.

Ingredients
  

corned beef sandwich

  • corned beef brisket
  • coleslaw
  • Russian dressing
  • 8 slices swiss cheese
  • 16 slices rye bread seeded

corned beef

  • 2 lbs. corned beef brisket
  • 4 garlic cloves
  • 1 bay leaf
  • 3 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon stone ground mustard
  • Water enough for the corned beef brisket to be submerged

Russian dressing

  • 1 cup mayonnaise
  • 1/4 cup ketchup
  • 2 Tbs. shallots finely chopped
  • 1 Tbs. prepared horseradish
  • 2 Tbs. pickle relish
  • ¼ tsp. hot sauce
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. sweet paprika

coleslaw

  • ½ lb. green cabbage shredded (about 3 cups)
  • ½ cup carrots shredded
  • 1 ½ tablespoons vinegar
  • 1 ½ granulated sugar
  • ½ cup mayonnaise
  • ¼ teaspoon celery seed
  • 2 tablespoons milk
  • Kosher salt and freshly-ground black pepper to taste

Instructions

  • Lightly toast the rye bread. Spread Russian dressing on the rye bread. Place a slice of swiss cheese on top of the bread. Next, pile a good amount of corned beef. Top it with coleslaw. Place the remaining piece of bread on top
  • And voila! You have the best corned beef sandwich.

  • Place the corned beef brisket in the slow cooker, then add the rest of the ingredients. Make sure you add enough water to submerge the corned beef brisket. Set the slow cooker to 10 hours. After the 10 hours the corned beef should be tender and juicy.

Russian dressing

  • Place all ingredients in a bowl and stir until well combined.
