Mexican Pizza (Taco Bell Copycat)

Mexican Pizza (Taco Bell Copycat) is crunchy, cheesy, and incredibly delicious. It’s layered with crunchy tortillas, ground beef, refried beans and topped with taco sauce, cheese, tomatoes, and green onions. The perfectly crunchy tortillas are the secret ingredient.

This delicious Mexican Pizza (Taco Bell Copycat) recipe was inspired by the famous Mexican pizza from Taco Bell. It’s one of my favorite items on the menu. I was first introduced to Taco Bell by my sister in middle school. She introduced me to Nachos BellGrande, which I really enjoyed. Later, when I met my husband, he introduced me to the Taco Bell’s Mexican Pizza. He liked to order it, and one day he insisted I tried it. Lo and behold, it was delicious.

Because I really like the Mexican Pizza from Taco Bell, but I rather have homemade food, I embarked on a journey to try to make the Mexican Pizza at home. The first challenge was to get the perfectly crunchy tortillas Taco Bell offers.

What type of tortilla to use for Mexican Pizza?

Finding the perfect crunchy tortilla was a challenge. What I knew from the start was that it was flour tortillas. I tested different types of flour tortillas and different cooking methods, none offered the crunchiness I was looking for. I was not going to give up, I continued searching for the perfect crunchy tortilla.

One day, while walking by the refrigerated section at the grocery store, I stumbled upon uncooked flour tortillas. I thought to myself “Can these be the ones?” I bought them, fried them, and they were perfect. Uncooked flour tortillas are the perfect tortillas to use for Mexican Pizza (Taco Bell Copycat). The crunchiness is like no other. The perfectly crunchy tortillas are the secret ingredient.

What sauce to use for Mexican Pizza?

The sauce on the Mexican Pizza (Taco Bell Copycat) was quite important to complete the recipe. I tested different sauces and they were not the right sauce. I first thought enchilada sauce might work, but the taste was not right. Then, I tested taco sauce and it was perfect. Taco sauce was the perfect sauce for the Mexican Pizza. Below is the taco sauce I used.

How to make Mexican Pizza (Taco Bell Copycat)?

Ground beef

To make Mexican Pizza (Taco Bell Copycat) start by cooking the ground beef. In a skillet, over medium-high heat, add oil, let it heat a bit, and add the ground beef. Cook the beef for a few minutes, add garlic powder, paprika, salt, cumin, chili powder, and oregano. Continue to cook the ground beef until it’s browned. Drain fat if you need to.

Next, preheat the oven to 400 degrees.

Fry the Tortillas

To fry the tortillas add 1/4 cup of oil to the skillet and let the oil get hot, carefully fry the uncooked flour tortillas until light brown. Be careful not to get burn, hot oil can splash. They will be lightly brown and crispy. Remove the tortillas to a plate lined with a paper towel. The paper towel will help soak the oil.  Below is a picture of what the fried tortillas look like.

Warm the refried beans

To warm the refried beans, place them in a bowl in a microwave or heat them on a skillet.

While you are warming up the beans, diced the tomatoes, thinly slice the green onions, and set them aside.

Assemble the Mexican Pizza (Taco Bell Copycat)

Now its time to assemble, start by lining a baking sheet with parchment paper, place four flour tortillas on the baking sheet. Divide the beans into four and spread the beans on each tortilla. Now, divide the cooked ground beef into four, and spread it on top of the beans.

Place the remaining four tortillas on top of the cooked ground beef. Spread two tablespoons of taco sauce on top of the tortillas and sprinkle 1/4 cup of the cheese on top of each pizza. You can use less or more cheese.

After you have sprinkled the cheese, place the Mexican Pizza (Taco Bell Copycat) on the preheated oven. It will take about five minutes or until the cheese has melted for the Mexican Pizza to be ready.

Take it out of the oven and top it with the fresh diced tomatoes, green onions, and drizzle more taco sauce. And voila! You have the most delicious Mexican Pizza (Taco Bell Copycat).

Ingredients
  

Mexican Pizzas

  • 8 flour tortillas uncooked
  • 1 Lb. ground beef taco meat
  • 1 can refried beans
  • 2 tomatoes fresh diced
  • 2 green onions thinly sliced
  • 1/2 cup taco sauce La Victoria brand – red taco sauce
  • 1 cup shredded cheese Mexican style blend
  • taco sauce to drizzle on top
  • 1/4 cup oil I use avocado oil

Ground Beef

  • 1 lb. ground beef
  • 1 teaspoon oil
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons paprika
  • 1 teaspoon salt
  • ¼ teaspoon cumin
  • 1 teaspoon chili powder
  • ¼ teaspoon oregano dried

Instructions
 

Ground Beef

  • In a skillet over medium-high heat, add 1 teaspoon of oil, heat the oil for a minute, then add ground beef. After a few minutes add garlic powder, paprika, salt, cumin, chili powder, and oregano. Cook the ground beef until its completely browned and cooked. Drain fat if you need to.
  • Preheat oven to 400 degrees.

How to assemble

  • Line a baking sheet with parchment paper, place four flour tortillas on the baking sheet.
  • Divide the beans into four and spread the beans on each tortilla.
  • Divide the cooked ground beef into four and spread it on top of the beans.
  • Place the remaining four tortillas on top of the cooked ground beef.
  • Spread about ¼ cup of sauce on top of the tortillas.
  • Then, sprinkle about ½ cup of the cheese on top of each pizza. You can use less or more cheese.
  • Place the baking sheet in the preheated oven for about five minutes or until the cheese has melted.
  • Take it out of the oven and top it with the fresh diced tomatoes, green onions, and drizzle more taco sauce. And voila! You have the most delicious Mexican Pizzas.

Notes

For the taco sauce you can choose the degree of heat you prefer, they have mild, medium, or hot.
