There is a nostalgic feeling when I eat this Heirloom Tomato Greek salad. It takes me back to my childhood when I would go with my mom to the grocery store and we would go to the prepared food section and order a Greek salad to go. For this salad I use heirloom tomatoes, you could use regular tomatoes, but heirloom tomatoes are much more flavorful. There are so many varieties of heirloom tomatoes. What I love most about heirloom tomatoes is their flavor. Each variety is so different and delicious. My favorite is the Cherokee purple variety. For the tomatoes if they are too juicy and have lots of seeds make sure you remove the juice and seeds. I use Persian cucumbers, you could use other cucumbers as well, but other cucumbers have lots of seeds. So if you are using other cucumbers make sure you take out the seeds. Cut the bell peppers, tomatoes, and cucumbers into bite size pieces and thinly slice the onions.

For the dressing pour all the dressing ingredients in a container and shake them until well mixed or whisk all the ingredients in a bowl.

Once you have the dressing ready, toss it with the rest of the ingredient in a bowl. Its best if you let it marinade for 30 minutes before eating it, but you can also eat it right away.

Ingredients
  

  • 1 green bell pepper bite size pieces
  • 1/3 onion thinly sliced
  • 3 cucumbers Persian - bite size pieces
  • 4 heirloom tomatoes bite size pieces
  • 12 oz. Kalamata olives halved
  • 3 tablespoons capers
  • 8 oz. feta cheese cubed

Dressing

  • 3 tablespoons olive juice Kalamata
  • 1 tablespoons lemon
  • ¼ cup avocado oil
  • 1 tablespoons caper juice
  • 2 tablespoons Mazzetti Rosato Sweet Vinaigrette or red wine vinegar

Instructions
 

  • Cut the bell peppers, cucumbers, and tomatoes into bite size pieces. Thinly slice the onions. Cut the Kalamata olives in half. Then cut the feta cheese in cubes.
  • Pour all the dressing ingredients in a container and shake them until well mixed or whisk all the ingredients in a bowl.
